First let me say that I'm not a Vegan, but I do try to cook healthy meals for my family. This cookbook is well-organized, informative and, quite frankly, delicious. Most of the ingredients are easy to find and the meals are quick to prepare. Even my kids found the food was tasty and not 'weird'. I especially liked the soup and pantry chapters. I would imagine a vegan or vegetarian would even be more impressed. This book will be used over and over again. I'm so glad I had the chance to read and review this one.
