Fur Babies and Hearty Soups with Lea Griffith #Recipe #Pets #BookGiveaway

Today, I’m talking fur babies, recipes and Running the Risk, my brand new Sourcebooks release and the second full-length novel in my Endgame Ops series. In RtR we have the story of Jude and Ella and their fight for a second chance at love. We also have plenty of food, because Jude’s Tia Rosa is a hardcore cook, and we have the introduction of a new player on the scene, Chica—a tortoiseshell cat who appears at Jude’s doorstep during a snowstorm and cements herself pretty quickly into Ella’s heart.
So first…Food. In RtR we have mention of potato soup and chili. Since food is a universal bring-people-together item, and it really brings Jude and Ella back to a place of comfort with each other in Running the Risk, I want to share Tia Rosa’s homemade recipes for both. The potato soup is hearty and the chili is hot, hot, hot so prepare yourselves.

Tia Rosa’s Homemade Potato Soup:
1 cup diced celery
½ cup water
6 medium potatoes (or as many as you want)
2-3 cups water
1 small onion, chopped
2 tsp salt
¼ tsp pepper (she prefers you grind your own)
3 cups milk
1. cook celery in ½ cup water until tender
2. Peel and cube potatoes
3. Please in a 4-qt saucepan with 2-3 cups water
4. Add cooked celery, onion, salt and pepper
5. Cook until potatoes are tender
6. Mash slightly to eliminate cubes
7. Add milk
8. Cook on low heat for 30 minutes
Once finished, garnish with cheddar cheese, green onions, and bacon bits. You can also pair this with sourdough bread or bread bowls.
Tia Rosa’s Homemade Chili:
1 pound lean ground beef
3 14 ½ ounce can Mexican-style stewed tomatoes, undrained, cut up
2 15 1/2 ounce can red kidney beans, rinsed and drained
2 stalks celery, chopped
1 large onion, finely chopped
1 cup water
1 6 ounce can tomato paste
1 4 ounce can diced green chile peppers
You can add as many diced jalapenos as you’d like (5 is scorching hot)
2 cloves garlic, minced
4 tsp chili powder
1 tsp ground cumin
1 cup shredded cheddar cheese (4 ounces)
½ cup dairy sour cream
1. In a large skillet cook ground beef until brown. Drain off fat.
2. Meanwhile, in a 4- to 6-quart slow cooker combine undrained tomatoes, drained beans, celery, onion, the water, tomato paste, undrained chile peppers, garlic, chili powder, and cumin. Stir in cooked ground beef.
3. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Serve with shredded cheddar cheese and sour cream. If desired, garnish with cilantro. Makes: 8 to 10 main-dish servings
So now you’ve made dinner and you’ve either coddled yourself, or your family, with comforting homemade potato soup, or you’ve shocked the fire out them (literally) with homemade chili. It’s time to talk fur babies. I love animals and have one pitbull named Remi, 1 inside cat named Calico (yes, she’s a tortoiseshell named Calico…blame my kids), and I have, are you ready, 6 outside cats—Mama Kitty, Man, Downs, Tiger, Trouble, and Newbie. I think word has gotten out that I’ll feed any animal who comes to me. So with my love of animals it’s only natural that it bleeds over into my writing, hence, Chica in RtR. Here we have a cat who has happened upon a safehouse built in the mountains of the Sangre de Christo and she’s managed to find the softest heart on the planet…RtR’s heroine, Ella Banning. You’ll have to read to find out how that goes… but allow me to share pics of my babies, well, two of them anyway. The outside ones are off doing whatever outside cats do during the day.
