Italian Style Stuffed Chicken Breast in Garlic Sauce #Food

Today I’m offering up a yummy Italian recipe that’s easy to prepare and a favorite with my family. Sloane, the heroine in Simmer, is the executive chef and owner of an Italian restaurant in the Mission District of San Francisco. My hero is the trustee of the real estate company that’s evicting her from her building. But more about that later…
Italian Style Stuffed Chicken Breast in Garlic Sauce
Prep Time 15 mins. Cook Time: 20 – 25 mins.
3 large chicken breasts with bone and skin (You can use boneless too.)
6 slices mozzarella cheese.
½ cup sundried tomatoes in oil, cut into thin slices
2 cups fresh spinach
2 tablespoons olive oil divided in half
1 tablespoon Italian seasoning (You’ll need more for the sauce.)
Toothpicks and a pan that goes from stovetop to oven
Creamy Garlic Sauce:
½ cup heavy cream
½ cup chicken broth
1 teaspoon garlic powder (you can also use finely diced and slightly cooked fresh garlic)
1 teaspoon Italian seasoning
1/3 cup grated parmesan cheese
1. Preheat oven to 375 degrees. Cut slits into the sides of the chicken and stuff first with cheese on the bottom, then tomatoes and spinach. Slide toothpicks in diagonally to close.
2. Rub 1 tablespoon of oil on the three chicken breasts then coat well with the Italian seasoning. Pour the second tablespoon of oil in a large heavy duty skillet or dutch oven and sear until each side of the chicken is golden brown.
3. In a small bowl whisk the heavy cream, chicken broth, garlic power, Italian seasoning and parmesan cheese. Pour into the bottom of the skillet surrounding the chicken.
4. Place skillet or dutch oven in oven and bake until cheese is bubbly and chicken is no longer pink.
Unlike my heroine, I am not an expert chef, but this is a meal I never ruin.

Maybe tasting what this luscious chef has to offer is exactly what he needs.
I read the letter Mr. Flint had handed me twice, only slightly conscious of my stomach dropping past my toes, through the floor and into the wine cellar. Here was my worst fear in black and white. I might as well have been reading my obituary. “You’re not renewing the lease on my restaurant?”
“I’m sorry, but no.”
The sounds of patrons enjoying their food, chatting with friends and family, continued around me. How was I going to tell my employees? My family? “I pay my rent on time. What’s this really about?”
“You have been an exemplary tenant, but Gate of the Bay Realty has decided to revitalize the entire block.”
“Property values have skyrocketed in the Mission District and the company wants to take advantage of this trend.”
He was speaking of Gentrification, a sharp toothed monster set on chewing up long time residents and spitting them out on the curb in some other neighborhood. Well, this didn’t end here. “Is Mr. Hanley in his office today?”
“Oh yes, but he won’t change his mind.”
We’d see about that. I sipped my coffee as Flint packed up his things. Mission Management: Executions with a smile.
But Flint was only the messenger. Hanley was the villain. Strangling came to mind, but I’d probably have to stand on a step stool to do it. At five feet one and a half inches my reach was limited. Poison was tempting but it would ruin my reputation as a chef. Maybe I could knock some sense into him with a cast iron frying pan. One of those beasts could take down a wealthy, entitled asshole, no problem.
