Vegan Scones #Food
I love to read the reviews that Night Owl Romance reviewers write in advance of one of my new releases. Pauline Michael is usually my awesome reviewer, but this time, Terri wrote a very flattering review for book 1 in my new Phoenix Brothers Series:

I just had to giggle when I read her thoughts on the heroes’ mom. Gabriella Fierro is one of my favorite characters too! And, as often happens, my secondaries can steal the show.
I had the best mother in the world. She was supportive without being unrealistic. If I needed anything special, she’d find a way to adapt her recipe or her life to help. But she never minced words or coddled any of us.
I’d like to think I managed to pick up some of her parenting style with my own daughter. Recently, while on a mother-daughter research-bucket-list vacation to Ireland, we discovered various things about ourselves and each other.
For instance, I knew my dear daughter was Vegan, but I had no idea how committed she would be to it, even while traveling. I tend to ‘bend the rules’ a bit when I’m in a foreign situation. Not her. Nope. Holly survived on potatoes and porridge (oatmeal) for ten whole days. Okay, we managed to find a salad or two for her and she’d use oil and vinegar on it.
Meanwhile, I was eating whatever…even though at home I try to eat as low carb as possible. Well, my favorite Irish food was a total no-no. Scones! Yum!
When I got home, I adapted a recipe and was able to make low carb, vegan scones! I’ve made them for my daughter several times. Even though she says they’re a bit dry (oh well, that’s the nature of the beast) I think I’ve managed to perfect the recipe. Now, I’d love to share it with you!
Step 1) Preheat oven to 350 degrees F.
Step 2) Prepare egg substitute: combine 3 Tablespoons (Tbs) of flax seed meal with 9 Tbs. of water. Set aside for at least 5 minutes.
Step 3) Combine dry ingredients in a large bowl:
2 cups almond flour
½ cup coconut flour
1 teaspoon (tsp) baking powder
½ tsp sea salt
2 tsp sweet spices of your choice. Cinnamon, ginger, glove, allspice… (I used Chinese Five Spice for the batch pictured…delicious!)
Step 4) Cut in ½ cup coconut oil until you get small crumbs
Step 5) Combine the following wet ingredients in separate bowl with the egg substitute:
4 Tbs almond or coconut milk
½ tsp Maple extract
½ cup granulated Stevia
1 Tbs brown sugar substitute
Step 6) Add wet to dry ingredients. (Optional--add ½ chopped nuts. Walnuts or Pecans ideally.)
Line a baking sheet with parchment paper. Wash and dry your hands. (I use my hands to form balls of dough and flatten them down a bit.) Bake in preheated oven 15 to 18 minutes. Yum!
